Try this next time you or the kids are hungry for some grilled cheese (from Self Magazine):
1 15 oz can of white beans, rinsed and drained
2 tsp Dijon mustard
4 slices whole-grain bread
4 slices lowfat Gruyere, Swiss, or sharp cheddar cheese
Puree beans in food processor, pulsing, adding 2 tbsp of water, one at a time, until smooth. Combine with mustard and spreak mixture on each slice of bread. Add cheese and form two sandwiches. Coat a medium nonstick skillet with cooking spray and set over medium-low heat. Place sandwiches on skillet until bottom is golden, 3 minutes. Spray top of sandwich and flip, cooking until other side is golden. Serves 2.
