Little Missmatched - Quiz book
Little Miss Matched has done it again! Many of you are parents, but for some of you, your little one has passed the "baby stages." Sneaky Chef Grilled Cheese
Try this next time you or the kids are hungry for some grilled cheese (from Self Magazine):
1 15 oz can of white beans, rinsed and drained
2 tsp Dijon mustard
4 slices whole-grain bread
4 slices lowfat Gruyere, Swiss, or sharp cheddar cheese
Puree beans in food processor, pulsing, adding 2 tbsp of water, one at a time, until smooth. Combine with mustard and spreak mixture on each slice of bread. Add cheese and form two sandwiches. Coat a medium nonstick skillet with cooking spray and set over medium-low heat. Place sandwiches on skillet until bottom is golden, 3 minutes. Spray top of sandwich and flip, cooking until other side is golden. Serves 2.
